I am finally spilling the beans on my favorite recipe ever. We legit have these yummy muffins at least once a month in this house.
Have any bananas that look sort of like this?
We buy bananas like its our job and every once and a while we let them go too long and no one thinks they are pretty enough to eat anymore.
Well this recipe is great because the uglier they are the better they are! I am by no means a good baker, this recipe is pretty fool proof.
1 cup of sugar or your favorite sugar substitute
2 cups of flour
1 teaspoon of baking soda
1 teaspoon of vanilla
3 tablespoons of sour cream or plain Greek yogurt
2 or 3 bananas (whatever you have works fine but I usually go with 3)
1/2 cup of butter, softened
Optional – chocolate chips…yum! I usually add half a bag. If you want to go the healthier route just leave them out or use blueberries or nuts instead! I also have used peanut butter chips and they were amazing.
1. Mix all the above ingredients until moistened.
2. Pour into either greased muffin tin or into muffin paper liners.
3. Bake at 350 for 20 minutes or until golden brown.
4. Recipe makes 12 large muffins
